Warm Potato Salad

This potato salad is great for a summer barbecue and really easy to make. I have used lactose free plain yoghurt with mayonnaise to keep the calories lower and chives to flavour the salad. If you serve it slightly warm the mayonnaise soaks into the potatoes and also it means that if you have a problem with resistant starches you can avoid these too. I used Jersey potatoes – the best, but any salad potato will be suitable to use. It really couldn’t be easier to make!

Ingredients

450g small jersey potatoes or small salad potatoes

1 tablespoon of mayonnaise

1 tablespoon of lactose free plain yoghurt

Chopped chives

Salt and pepper to taste

Method

Boil the potatoes in salted water till soft.

Drain well.

Add the yoghurt and mayonnaise to a dish, season and add finely chopped chives.

Mix with the warm potatoes.

I decorated with some thyme leaves and chopped chard stems.

Pasty

I can’t claim that these are the Cornish variety but they are tasty and the celeriac gives a nice celery flavour to them. The pasty is a portable treat that can be taken on any picnic and these are low fodmap and very filling.

Ingredients

300g of gluten free plain flour

1 tsp xanthan gum

1 tsp salt

50g butter

1 egg

1 extra egg for glazing and extra flour for rolling out the pastry

500g of beef skirt

1oog of celeriac

Fresh Thyme

Salt and pepper

Method

Add the flour to a bowl and salt and pepper and xanthan gum – stir well into the flour

Cut up the butter into cubes and rub into the flour

Add the egg and extra water if required and bring the pastry together

Knead the pastry till smooth

Chill

Whilst the pastry is chilling chop the meat and celeriac into small cubes

Add the thyme

break the second egg into a bowl and whisk

Roll out the pastry in between cling film

Cut out disks about the size of a small plate

Add a small amount of meat and celeriac and thyme to half the disk

Add salt and pepper

Brush egg around the pastry edge on the half of the disc with filling

Bring over the other half of the disk to make the lid and crimp

Brush the top of the pastry with egg wash

Cook at 165 degrees C or Gas mark 3 for 50-55 minutes

Christmas bread & butter pudding low fodmap

Yes it’s still November and thoughts are turning to Christmas🎄. I apologize now 😃 for posting this recipe but you do need to be planning and perhaps trialing recipes before the big day so here is one for consideration. Bread and butter pudding is not one of my favourite dishes as I have nightmarish visions of being offered this at school and school lunches were not to my liking. However it is a great option for a lighter pudding on Christmas day when spiced or perhaps thanksgiving if you are in the USA. If you can’t get Schar brioche rolls in the USA gluten free croissants will also be suitable. It is very easy to make and contains low fodmap ingredients, so should be a safe option for those of you following a low fodmap diet.

Ingredients

1 pack of Schar* brioche rolls (gluten & wheat free)

500mls of lactose free milk

3 eggs and one egg yolk

50g pecan nuts

1/4 teaspoon of allspice and 1 teaspoon of cinnamon

2 tablespoons of 100% maple syrup

1 tablespoon of raisins

butter or spread

Dark brown sugar for sprinkling on the top

Method

Slice the brioche rolls length-ways

Chop the pecan nuts reasonably finely

Measure the lactose free milk and add the eggs, maple syrup and spices – mix well

Line the dish with butter and spread butter thinly on both sides of the bread.

Dip each slice into the chopped nuts to coat them.

Line the bread into the dish.

Pour in the milk mixture, then scatter the raisins and sugar on the top and grate over nutmeg.

Cook in the centre of an oven at gas mark 5 temperature 190 deg.C after 30 minutes check and if the edges of the bread or sultanas look a little over done cover with foil for the last 10 minutes. Enjoy!!

Hot surf and turf wrap – Gluten and wheat free

2 Steaks

200 g of large prawns

Wheat & Gluten free seeded wrap

Gravy browning – a few drops

2 teaspoons cornflour

Spray oil for frying

2 carrots

Green salad leaves and 5 radishes for the salad bowl

Method

Trim fat from the Steak

Fry steak till browned using spray oil

Cover with water and add a few drops of gravy browning

Cover with a lid and cook till tender

Chop carrots into bite size pieces and spray with oil.

Cook the carrots for 20 minutes in the oven whilst the steak is cooking.

Remove steak from the pan to rest and add cornflour to the sauce to thicken, cook.

Cook prawns

Taking a wrap add ingredients including gravy and fold wrap over. Serve with green leaves and sliced radish.

*If you are following a Low FODMAP diet then check your wrap for other Low FODMAP ingredients – the wrap in the image contains concentrated fruit juice of unknown source so it is unsuitable for the Low FODMAP diet. You can also serve the filling on other gluten-free breads such as gluten-free pitta, gluten-free ciabatta or gluten-free french bread for example.
